Here's just one delicious, BUDGET-FRIENDLY, KID-FRIENDLY Recipe:

Ham & Cheese Souffle Omelet

Serves 4 for dinner - perfect with a salad or broccoli!

  • 5 large eggs, separated
  • Coarse salt and fresh ground pepper
  • 2 Tablespoons butter
  • 1 cup shredded Colby/jack cheese
  • 3 oz. sliced ham good-quality ham off the bone, cut into strips about 1 inch long
  • Chopped chives or green onion tops for garnish
  1. Preheat broiler to high, placing the rack about 6-8 inches from the heat source.  Using a hand mixer or egg beater, whisk the egg whites in a bowl until soft peaks form.  In another bowl, hand-whisk the egg yolks until pale yellow and lightly thickened.   To the yolks, which in 4 tablespoons of water and season with salt and pepper.  Fold in the whites into the yolk mixture.  Add ½ cup of the shredded cheese with a rubber spatula until combined.
  2. Heat the butter in a large, nonstick  skillet over medium heat until the butter is foaming.  Add the egg mixture and spread evenly. Cook for about 1 minute, until he eggs look just set around the edges.   Run a rubber spatula around the edge of the omelet to loosen it.
  3. Sprinkle the omelet with the remaining cheese and the ham. Transfer the skillet to the broiler, and broil about 2 minutes, until the top of the omelet is set. Watch carefully! To serve, run the spatula again around the edge of the omelet.   Sprinkle with chives and slice into wedges.
